GREEN PEA CASSEROLE 
1 stick butter, melted
2 ribs celery, chopped fine
1 small onion, minced
1/2 medium green pepper, chopped fine
1 can water chestnuts (with water)
1 can cream of mushroom soup
1 small jar pimento and juice
2 cans LeSueur green peas
crushed Ritz crackers

Cook first 4 ingredients until tender. Add the remaining ingredients and pour into a baking dish. Top with crushed Ritz crackers and bake at 350°F until bubbly.
