TWICE BAKED SWEET POTATOES 
4 med. sweet potatoes
2 tbsp. butter
1/2 tsp. salt
1/3 c. orange juice
1 sm. ripe banana, mashed
1/4 c. chopped pecans
Coconut (opt.)

Scrub and pierce the potatoes. Bake at 375 degrees for 40 to 60 minutes or until tender. Cut a slice off top of each potato and scoop out the pulp leaving skins intact. Mash potatoes with butter, salt, orange juice, and banana. Spoon mixture into shells and tops with the chopped pecans, sprinkle lightly with coconut. Return to oven and bake 12 to 15 minutes. 4 servings.
