SWISS EGG SCRAMBLE 
2 c. soft bread cubes, no crusts
1 3/4 c. milk
8 eggs
3/4 tsp. salt
1/8 tsp. pepper
2 tbsp. butter
8 oz. Swiss cheese, grated

TOPPING:

2 tbsp. melted butter
1/2 c. fine bread crumbs
8 slices bacon, crisp & crumbled

Add milk to bread cubes. Drain after 5 minutes, adding drained milk to 8 eggs; beat slightly. Add salt and pepper. Melt 2 tablespoons butter; add egg mixture and cook until soft. Add bread cubes and place mixture in square or shallow baking dish (greased). Sprinkle with grated cheese and topping. (If making ahead, add cheese and topping just before baking.) Bake at 400 degrees for 10-15 minutes.
