SWISS CHEESE AND EGG CASSEROLE
2 c. soft bread cubes (no crusts)
1 3/4 c. half & half
8 eggs, slightly beaten
2 tbsp. butter
1 tsp. seasoned salt
1/2 tsp. pepper
1 c. shredded Swiss cheese
8 slices bacon, cooked crisp and crumbled
1/2 c. fine dry bread crumbs (use crusts)
2 tbsp. butter, melted

In small bowl, combine bread cubes with half and half. Soak 5 minutes. Drain liquid and add to eggs. Beat well. With 2 tablespoons butter, scramble eggs softly over medium heat. When eggs are still soft and almost cooked, add soaked bread cubes. Stir to combine. Sprinkle with seasoned salt and pepper. Pour into greased casserole (10 inch), topping with cheese, bacon and bread crumbs. Drizzle with melted butter. Bake at 400 degrees for 10 to 15 minutes or until cheese is melted. Cut into squares to serve. Creamy and rich.
