SWISS CHEESE GREEN BEAN
CASSEROLE
 
2 tbsp. flour
2 tbsp. butter
1 1/2 c. sour cream
1/2 tsp. grated onion
1 tsp. salt
1/4 tsp. sugar
2-3 cans whole green beans
1/2 to 3/4 lb. grated Swiss cheese
1/2 c. bread crumbs
2 tbsp. melted butter

Melt butter over low heat in a heavy saucepan. Blend in flour, grated onion, salt, and sugar. Cook over low heat, stirring until mixture is smooth and bubbly. Stir in sour cream, heat, do not boil. In 9 x 13 dish or other casserole dish alternate layers of green beans and Swiss cheese. Top with Swiss cheese, sour cream sauce. Mix together melted butter and bread crumbs. Sprinkle over top of casserole. Bake at 400 degrees for 20 minutes.

When my mother started making this recipe back in the 80's we NEVER went back to green beans with condensed creme of mushroom soup, though I have added fresh mushrooms to this recipe. This year I used part cracker crumbs on top and the fried onions on top and well, and it was even more a knock-out!
