MANNINGS GREEN BEAN, DILL AND
BLUE CHEESE SALAD
 
DILL SEED DRESSING:

1 c. oil
1/4 c. vinegar
3 tbsp. lemon juice
1/4 tsp. pepper
1/4 tsp. paprika
1/2 tsp. dry mustard
1 to 2 cloves garlic, minced
1 tbsp. dill seed or dill weed

Mix all dressing ingredients together and refrigerate.

SALAD:

2 lb. fresh green beans, clean and break into pieces
1 bunch green onions, chopped
1/2 lb. bacon
1/4 lb. Blue cheese, to garnish
1/4 c. mayonnaise
2 tbsp. sour cream

Steam beans al dente. Drain and set aside. Fry bacon until crisp; drain and crumble. Reserve 1 tablespoon bacon for later. When ready to mix salad, mix only 1/4 cup of dressing with mayonnaise and sour cream. Mix well and pour over beans, onions and bacon. Top with Blue cheese and reserved bacon.

I can't believe there are no comments on this recipe. I made it the first time for Thanksgiving, 2009. Was looking it up again for Easter and noticed no comments. Try it, it is fantastic!

Preparing again, Easter 2014. It is a fantastic salad. If Blue cheese is a problem, try feta.
