STRAWBERRY BANANA BREAD | |
1 1/2 c. sifted flour 2/3 c. sugar 2 tsp. baking powder 1/2 tsp. salt 3/4 c. quick oats 1/3 c. salad oil 2 eggs, slightly beaten 1/2 c. mashed strawberries 1/2 c. or if preferred 1 c. mashed bananas, 1 med. Sift together flour, sugar, baking powder and salt into a medium bowl. Stir in oats. Add oil, eggs, strawberries and banana, stirring just to moisten dry ingredients. Turn into a greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. Bake in a preheated oven at 350 degrees until lightly browned and toothpick comes out clean, about 60-65 minutes. Cool on wire rack 10 minutes, turn out of pan. Turn right side up and cool. Wrap in plastic wrap. Best made a day ahead. |
