BLUEBERRY MUFFINS 
1/2 c. oatmeal
1/2 c. orange juice
1 1/2 c. flour
1/2 c. sugar
1 1/4 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. oil
1 egg, slightly beaten
1 c. blueberries
2 tbsp. sugar
1/4 tsp. cinnamon

Soak oatmeal in orange juice in a large bowl. Add flour, sugar, baking powder, salt, soda, oil and egg. Stir into a smooth batter (stiff). Mix together cinnamon and sugar and set aside. Fold in blueberries. Fill muffin cups 2/3 full, sprinkle cinnamon sugar mixture over top of muffins before baking. Bake at 400 degrees for 18 to 22 minutes. Use liners in muffin tin or grease pan.
