FAVORITE BLUEBERRY MUFFINS 
2 c. fresh or frozen blueberries
2 tbsp. flour
3/4 c. old-fashioned oatmeal
1 1/2 c. all-purpose flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter (grated)
Grated rind of 1 lemon
2/3 c. milk
1 egg slightly beaten

Mix blueberries with flour and set aside. Grind oatmeal (fine) in blender. Mix oatmeal with flour, sugar, baking powder and salt. Add grated butter and lemon rind. Mix in the milk and slightly beaten egg. Do not beat. Stir just until combined. Fold in the blueberries just until combined.

Line 18 muffin cups with paper liners. Fill each cup 2/3 full with batter. Sprinkle tops with a mixture of 1 tbsp. sugar and 2 tbsp. brown sugar mixed with 3/4 tsp. cinnamon. Bake at 400 degrees for 20 minutes.
