BLUEBERRY MUFFINS 
1 3/4 c. flour
2/3 c. sugar
1 tbsp. baking powder
3/4 tsp. salt
6 tbsp. butter
1 egg, beaten
1/2 c. milk
1/2 tsp. vanilla
1 tsp. grated lemon rind
1 c. fresh or frozen blueberries

Mix dry ingredients. With pastry blender blend in butter. Mix liquid ingredients and lemon rind, then add all at once to flour mixture. Stir only until flour is moistened. (Batter should be lumpy.) Fold in berries gently. Bake at 400 degrees F., 20-25 minutes. Makes 1 dozen.
