TERESA'S BLUEBERRY MUFFINS 
Mix together:

2 c. flour
1 (3 oz.) pkg. instant vanilla pudding
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt

Beat:

1 egg

Add:

1/4 c. oil
1 1/2 c. milk

Add to flour mixture. Do not overbeat.

Add:

1 c. blueberries

Bake at 375 degrees 20-25 minutes. Makes 12 large muffins.

VARIATION; LEMON MUFFINS: Substitute instant lemon pudding and add 1/2 cup raisins.

CRANBERRY MUFFINS: Instant vanilla pudding, 1/2 cup chopped cranberries, 1/2 cup chopped nuts, 1 teaspoon orange rind.
