GINGER PICKLES | |
5 lbs. cucumbers 3 c. lime in 2 gallons water 1/2 c. alum in 2 gallons water 1/4 - 1/2 c. powdered ginger in 2 gallons water 3 pts. vinegar 3 pts. water 5 lbs. sugar 1/2 box pickle spices (tied up in a cloth) 1. Cut cucumbers in pieces and soak 24 hours in lime water. Wash and drain. 2. Soak 3 hours in alum water. DO NOT WASH, just drain. 3. Soak 6 hours or a little less in ginger water. 4. Bring vinegar, water, sugar and pickle spices to a boil and add drained cucumbers. Let stand overnight. 5. Next morning boil for 1 hour or more and pack in jars and seal. |
