GINGER PICKLES | |
5 lbs. mature cucumbers (completely yellow) 2 c. lime 1/2 c. alum 1/2 c. powdered ginger 2 pts. vinegar 2 pts. water 5 lbs. sugar 1/2 box pickling spice Few pieces ginger Peel, seed and cut mature cucumbers in strips. Soak 24 hours in lime water (2 cups to 2 gallons water). Wash well, soak in alum water (1/2 cup alum to 2 gallons water) for three hours. Drain, but do not wash. Soak six hours in ginger water (1/2 cup powdered ginger to 1 gallon water). Drain, but do not wash. Boil vinegar, water, sugar and pickling spice and a few pieces of ginger (tied in bag). Boil until clear and pack in sterilized jars. Seal. Process at simmering temperature for 15 minutes. |
