BAKED CHICKEN OR TURKEY WITH
DRESSING
 
1 lg. stewing chicken

Cook and bone (or use turkey leftovers.)

DRESSING:

1 1/2 qt. cubed dry bread crumbs
2/3 c. butter (or chicken fat)
1/4 c. chicken broth
1 sm. onion, diced
3/4 tsp. salt
1/2 tsp. sage
2 eggs, well beaten

Mix bread crumbs and butter by hand. Add broth, onions, salt, sage and eggs and mix thoroughly.

SAUCE:

3 tbsp. butter
3 tbsp. flour
2 1/2 c. chicken broth

Melt butter; add flour and add chicken broth slowly, stirring constantly. Arrange chicken in shallow pan, about 8x14 inches. Cover with dressing. Pour sauce over all and bake about 50 minutes in 350 degree oven. Cut in squares and serve.
