SWEET POTATO SOUFFLE 
3 c. potatoes
1 c. sugar
2 eggs
1/4 c. milk
1/4 c. orange juice
1/2 tsp. salt
1 tsp. vanilla
Crushed pineapple, drained

Mix above ingredients and put in buttered dish.

TOPPING:

1 c. brown sugar
1 c. pecans, cut up
1/2 c. flour
1/2 stick butter, melted

Crumble topping over potatoes. Cook at 400 degrees for 30 or 40 minutes or until brown on top.
