SWEET POTATO SOUFFLE (OR CRUNCH) 
3 c. mashed sweet potatoes (or 1 lg. carton 29 oz. or 1 lb. 13 oz.)
1 c. sugar
1/2 c. milk
1/2 stick butter
3 eggs
1 tbsp. vanilla
1 c. brown sugar
1/2 stick butter
1/2 c. self rising flour
1 c. chopped nuts (pecans)

Combine sweet potatoes, sugar, milk, 1/2 stick butter, eggs and vanilla. Pour into greased baking dish.

In separate bowl mix brown sugar, 1/2 stick butter, flour and pecans. Sprinkle this mixture on top of sweet potatoes. Bake at 350 degrees for 35 minutes.
