BILL BOYCE'S FAMOUS CHILI | |
3 lb. hamburger (2 lb. lean; 1 lb. 30% fat) Lots of onions 2 (4 oz.) cans mushroom pieces 1 qt. canned tomatoes 1 can tomato paste 1 lg. (20 oz.) can red kidney beans 1 sm. (15 oz.) can red kidney beans 1 env. chili seasoning 2/3 c. vinegar 1/2 c. sugar 1 tsp. baking soda Brown hamburger in large skillet. Spoon out with slotted spoon into 8-quart saucepan. Fill skillet with onions cut into fairly large pieces. Saute in meat grease until translucent, not brown. Add to pan with meat, grease and all. Add all other ingredients to pan, except baking soda. Add soda while stirring, will foam, stir until foaming stops, cook on slow boil, stirring often for 3 hours. Simmer 2 hours, stir often, let cool. Refrigerate. Better second or third day. |
