CARROLL'S FAMOUS CHILI 
5 tbsp. corn oil
1 c. coarsely chopped onions
3 cloves garlic, finely chopped
1 c. diced green pepper
2 lbs. lean coarsely ground beef
4 c. fresh or canned tomatoes with juice
4 c. kidney beans
1 tsp. salt
2 tbsp. chili powder
2 tbsp. cumin
1/8 tsp. Tabasco
1/8 tsp. red pepper
1/2 can beer

1. Brown onions, garlic, pepper until onions become translucent.

2. Add ground beef and brown.

3. Add remaining ingredients.

4. Cover and simmer for at least 1 hour.

5. Serve with grated cheese and/or chopped onions and/or sour cream.
