FRENCH FRIES 
Baking potatoes
Shortening or cooking oil for deep fat frying

Peel potatoes. Cut potatoes lengthwise into 3/8 inch wide strips. Heat shortening or oil in saucepan or deep fat fryer to 360 degrees. Dry potatoes with paper toweling. Fry potatoes, a few at a time in deep hot fat 360 degrees for 6-7 minutes or until crisp and golden brown. Drain on paper toweling.

For crisper French fries, fry potatoes at 360 degrees about 5 minutes or until lightly browned. Drain on paper toweling and cool. Just before serving, return French fried to fat at 360 degrees; for 2 minutes more; drain again. Sprinkle potatoes immediately with salt.
