MIXED VEGETABLES WITH GINGER
DRESSING
 
6 c. broccoli flowerets
1 c. sliced carrots
1 c. cold water
1/2 c. sweet red pepper, cut in strips
1/2 c. summer squash, cut in julienne strips
2 tbsp. toasted sesame seeds

Using large saucepan, boil water and add broccoli and carrots. Boil 1 minute, rinse in cold water and drain. Mix all vegetables in a serving bowl. Toss lightly with ginger dressing and sprinkle on sesame seeds.

GINGER DRESSING:

1 (8 oz.) pkg. cream cheese
2 tbsp. soy sauce
1 tbsp. lemon juice
2 tbsp. olive oil
1 tsp. fresh grated ginger

Place all ingredients in a blender or food processor. Process until well blended.
