CHICKEN FOR EIGHT 
1 chicken
1 (8 oz.) pkg. cornbread stuffing mix
2 tsp. chopped onion
12 oz. sour cream
1 can cream of chicken soup
1 stick butter
1 (4 oz.) can mushrooms

Cook and bone chicken, butter or spray with Pam a 9"x11" Pyrex baking dish. Sprinkle 3/4 of the stuffing mix in pan. Moisten with 6 tablespoons water. Mix sour cream, soup and onion. Spread small amount over the dressing mix. Put slices of chicken on top, then add mushrooms. Spread remaining cream mixture on next and then the rest of the dressing mix. Chop butter and place on top. Bake until bubbling at 375 degrees for 15 minutes and 325 degrees for 20 minutes.
