BEEF - VEGETABLE CASSEROLE 
2 lb. chuck, cut in 3/8" slices
Salt & pepper
1 can Golden mushroom soup
6 potatoes, cut in 1/2" slices
4 carrots, sliced
1 can onions, drained
Chopped parsley

Brown meat in 2 tablespoons butter. Add salt and pepper. Put in 4 quart casserole. Add 1 cup boiling water to skillet to loosen drippings. Pour over meat. Add soup. Cover tightly. Bake at 325 degrees for 1 1/2 hours. Add vegetables and bake 1 1/2 hours longer. Sprinkle with parsley.
