BEEF AND VEGETABLE CASSEROLE 
1 lb. ground meat
3-4 potatoes
3 carrots
1 sliced or chopped bell pepper
1 can mushroom soup
1 sliced or chopped onion
Salt and pepper to taste

Cover the bottom of a casserole with ground beef, then potatoes, carrots, bell pepper and onion. Pour can of mushroom soup on top. Cover and bake for 45 minutes to 1 hour at 350 degrees.
