CARROT CAKE 
2 c. self-rising flour
2 1/2 tsp. cinnamon
2 c. sugar
1 c. chopped walnuts or pecans
1 1/2 c. oil
4 eggs
1/2 c. raisins
3 c. grated carrots

Cream sugar and oil. Add remaining ingredients. Pour into 9 x 13 inch sheet pan. Bake at 325 degrees for 30 to 35 minutes. Cool. Frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1 lg. pkg. cream cheese
1 box confectioners' sugar
2/3 stick butter
2 tsp. vanilla

Cream all ingredients together. Frost cooled cake.
