MY CARROT CAKE 
2 c. sugar
1 1/2 c. Crisco oil
4 eggs
2 tsp. apple pie spice
1 tsp. vanilla
1 tsp. baking soda
2 c. self rising flour
3 c. carrots, finely grated
1/2 c. coconut
3/4 c. raisins
1 c. pecans, chopped

Cream sugar and oil. Add one egg at a time beat well after each. Mix in spice and vanilla. Combine soda with flour. Add flour mixture to sugar mixture - 1/2 cup at a time. Add carrots, coconut, raisins and pecans. Spray bundt pan with Pam. Pour mixture in. Bake at 325 degrees for 45-55 minutes or until spring back when lightly touched. Let cool and frost with cream cheese frosting.
