MAM-MA'S CARROT CAKE 
2 c. sugar
4 eggs
1 1/2 c. salad oil
1 tsp. vanilla
2 1/2 c. self rising flour
2 tsp. baking soda
2 tsp. cinnamon
3 c. grated carrots

ICING:

1 1/2 (8 oz.) pkgs. cream cheese
1 1/2 boxes 4X sugar
1 stick butter, melted
1 tsp. vanilla
1 1/2 c. chopped pecans (I toast these in the butter as it melts)

Cream sugar, eggs, oil and vanilla together. Add flour, soda, cinnamon to mixture; mix well. Add grated carrots and mix well. Bake at 375 degrees in 3 greased and floured 9" cake pans about 25 to 30 minutes. Cool layers.

ICING: Add all ingredients together and beat well. Ice tops and sides of the three layers.
