BANANA NUT BREAD 
1 1/2 c. all purpose flour
1 tsp. baking soda
1 c. sugar
1/2 tsp. or less salt
3 to 4 bananas, mashed (about 1 1/2 c.)
1/2 c. egg substitute or 2 eggs
1 tsp. vanilla
1/2 c. oil
3/4 c. plain non-fat yogurt
2/3 c. nuts (pecans are the best)

Sift together flour, soda, sugar and salt. Set aside. Blend or beat bananas until smooth, add egg substitute or eggs, vanilla and oil; fold in yogurt. Add dry ingredients slowly to wet. Beat until smooth, add nuts. Spray pan with Pam, then pour into loaf pan. Bake for 1 hour at 350 degrees. Makes 1 loaf.
