MOTHER'S BEST BANANA NUT BREAD 
1/2 c. shortening
1 c. granulated sugar
2 eggs, separated
3 bananas, well mashed
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 c. chopped nuts

Cream shortening and add sugar gradually, creaming it in well. Add well-beaten egg yolks, bananas and flour (which has been sifted with baking soda and baking powder). Add nuts. Beat egg whites until stiff; fold into batter. Turn into well greased loaf pan. Bake 45 minutes to 1 hour at 350 degrees. Let cool 10 minutes in baking pan. Then, before removing, use a sharp, thin knife to go around the edges of the pan to loosen the bread.

The secret to the taste and texture of this bread is the addition of the beaten egg whites.
