CRANBERRY ORANGE BREAD | |
2 c. flour 1 1/2 tsp. baking powder 1 c. sugar 1 c. cranberries (fresh or frozen), chopped or whole 1 beaten egg 1/4 c. melted butter Juice from 1 orange plus water to 3/4 c. 1/2 tsp. baking soda 1/2 tsp. salt Grated rind of 1 orange Combine flour, baking powder, baking soda, salt, sugar and orange rind. Stir in cranberries. Combine egg, melted butter and orange juice. Add to dry ingredients until blended. Pour into loaf pan (greased). Bake at 350 degrees F for 50-60 minutes or until toothpick comes out clean. Cool 10 minutes - remove and cool on rack. Wrap and store 1 day before cutting. |
