CRANBERRY ORANGE NUT BREAD 
1 egg, well beaten
1 c. sugar
2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
2 tbsp. oil
1 c. chopped walnuts
1 c. chopped cranberries
Juice & chopped rind of 1 orange

First put orange juice and oil in a measuring cup and add enough boiling water to make 3/4 cup in all. Let cool. Beat egg and add sugar and the well cooled orange juice.

Add dry ingredients which have been sifted together. Chop the nuts, orange rind and the cranberries in the food processor or blender. Add these to the mix. Bake at 325 degrees for about an hour or until done.
