“CRANBERRY NUT BREAD” IS IN:
NEXT RECIPE:  HOLIDAY EGGNOG PIE

CRANBERRY NUT BREAD 
2 cups all-purpose flour
1 cup sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 cup orange juice
1 tbsp. grated orange peel
4 tbsp. (1/2 stick) butter, melted
1 egg, well beaten
1 1/2 cups fresh cranberries, coarsely chopped
1/2 cup chopped nuts

Preheat oven to 350°F. Grease and flour a 9x5x3-inch loaf pan.

In a bowl, combine flour, sugar, baking powder, salt and baking soda. Stir in orange juice, orange peel, shortening and egg. Mix until well blended.

Stir in cranberries and nuts. Turn batter into prepared pan, filling about 2/3 full.

Bake for 55 minutes or until a toothpick inserted in center comes out clean.

Cool on wire rack for 15 minutes. Run a butter knife along edges of cake to free the bread from pan.

Brush with melted butter while still warm and sprinkle with coarse sugar.

Tried this recipe and it was very good. The little bits of cranberry add just a touch of tartness. I did not add the orange zest but wish I had. It would of added a little more orange flavor. I did bake it in mini loaf pans using three and baked for 45 minutes. I will be adding this bread to my holiday list.

Use all of the ingredients listed to make this come out right. Have made this several times and has come out good all the time.

Excellent recipe. Definitely add the orange zest. This last time, the bread came out a tiny bit dry, bust still a vibrant fresh flavor. The citrus is essential!
