WILD RICE SOUP | |
3 oz. wild rice 1 tsp. salt 1/4 lb. bacon, diced 1/2 med. onion, diced 1 lg. stalk celery, diced 2 cans cream of mushroom soup Pepper to taste 1 can chicken broth 1 1/2 soup cans milk OR 1 can milk and 1/2 can white wine 1 can (4 oz.) mushrooms (or) fresh (see recipe) 1/8 tsp. Beau Monde seasoning Bring 1 3/4 cups water to boil. Add washed rice and salt. Cover and cook over low heat 35-45 minutes. Fry bacon - remove. Saute onion and celery in fat. Drain. Drain mushrooms and dice or use fresh mushrooms, diced and sauteed. Combine all. Simmer 20 minutes or longer. Reheating improves flavor. |
