1 box yellow butter cake mix
4 eggs
1 stick butter, softened
1/2 c. mandarin orange juice
1 tbsp. vanilla

Preheat oven to 350 degrees. Beat all of above for 4 minutes. Chop mandarin oranges and add. Beat again. Bake for 25-30 minutes in jelly roll pan. Cool.

TOPPING:

1 pkg. vanilla instant pudding
Juice from crushed pineapple
1/2 c. powdered sugar
4 oz. Cool Whip (1/2 of med. container)

Mix together pudding and pineapple. Add sugar and Cool Whip. Stir in pineapple and spread on cake. Keep refrigerated.
