CHEESE & APPLE BREAD 
1/2 c. butter, softened at room temp.
2 eggs, beaten
2/3 c. sugar
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 c. peeled shredded apples (1 med. size apple)
1/2 c. shredded cheddar cheese

Combine butter, eggs and dry ingredients in large mixing bowl. Blend well (by hand). Stir in apples and cheese. Turn into well-greased 9 x 5 inch loaf pan. Bake in a preheated 350 degree oven for 50 to 60 minutes until center of loaf tests done. Cool thoroughly before removing from pan. Serve with sweet butter. Freeze, if desired or refrigerate for one day. Makes 1 loaf. This tastes better the second day.
