PORK CHOPS W/ APPLE JUICE &
MUSHROOMS
 
2 large pork chops, loin or shoulder chops
6-8 whole fresh mushrooms, sliced
salt and black pepper, to taste
4 tbsp. fresh breadcrumbs (even better made with seeded bread)
2 to 3 oz. grated Cheddar cheese
1/2 cup apple juice
2 pieces of buttered foil

Preheat oven to 375°F.

Put sliced mushrooms in a shallow baking dish. Season the pork chops with salt and pepper. Place pork chops on top of the mushrooms.

Mix bread crumbs and grated cheese. Sprinkle over the pork chops. Cover each chop with foil, buttered side down. Pour apple juice in pan around the chops.

Bake at 375°F for 40 to 45 minutes. Remove foil during the last 10 minutes.

Serves 2.
