PEANUT BUTTER OATMEAL COOKIES 
3/4 c. shortening
1/2 c. creamy peanut butter
1 1/2 c. sifted flour
1 tsp. baking soda
1/4 c. water
1 c. sugar
2 eggs
1 tsp. cinnamon
1 tsp. salt
1 1/2 c. quick oatmeal

In large bowl, combine shortening, sugar, peanut butter and eggs. Mix until creamy. Sift together dry ingredients; add to peanut butter mixture. Add water and oats; beat until thoroughly blended. Drop by teaspoonfuls onto ungreased cookie sheets.

Bake in moderate 375°F oven for 12-15 minutes or until done.

Makes 3 dozen cookies.

These cookies came out grrrreat! Although I did make some alteration which were: 1) I substituted the shortening with 1/2 cup salted butter (1 bar) and 2) I used 3/4 cup granulated white sugar and 1 cup brown sugar.... These cookies had just the right amount of sweetness to them. I also baked them for 13 min to be exact, they came out little bit crunchy on the exterior and soft and chewy inside. Yummy! I will definitely make this recipe again!

Needs about 1/4 to 1/2 cup more sugar and it would be great. I also added vanilla. No cookie is complete without it.

What a Great combination...peanut butter and oatmeal. So I added choc chips and these cookies were AMAZING!!! Definitely worth trying...over and over. LOL
