LINDA'S CHICKEN SALAD 
I like a drier chicken salad, not drenched in mayonnaise. So I created this lower fat version. It is not real oily like some chicken salads that are pre-made in store. This is a great way to use up that abundant supply of cucumbers from the summer garden and if you don't have an apple on hand, and a good way to add a dash of extra dairy with the cottage cheese which you cant really taste, also stretches the chicken a bit!! My husband who is diabetic loved this!!

1 (12 oz.) can cooked chicken breast, drained well
1 small cucumber peeled and diced
1 boiled egg, diced
1 tbsp. low fat Ranch dressing
1-2 tbsp. Dijon mustard
2 tbsp. small curd cottage cheese

Mix all above and serve in a lettuce wrap or in a tortilla wrap.
