BROCCOLI SOUFFLE 
2 pkg. chopped broccoli
1 c. mayonnaise
2 eggs, beaten
1 stack Ritz crackers
1 c. cream of celery soup
3 tbsp. onions
1 c. grated cheese
1 stick butter, melted

Cook, drain and cool broccoli. Beat eggs, add soup, mayonnaise, onion, and cheese. Add to broccoli. Melt butter; add crushed Ritz crackers. Put vegetable mixture in ungreased baking dish. Sprinkle with cracker mixture. Bake at 350 degrees for 1 hour.
