AUNT MARYANN'S BROCCOLI SOUFFLE 
1/4 c. chopped onion
6 tbsp. butter
2 tbsp. flour
1/2 c. water
8 oz. jar Cheez Whiz
2 pkgs. frozen chopped broccoli
3 beaten eggs
1/2 c. cracker crumbs

Saute onion in butter, mix and add flour and water a little at a time then add cheese. Cook until mixture bubbles. Cook and drain broccoli, add to eggs which have been beaten in a large bowl, fold in cheese mixture. Pour into buttered casserole and cover with cracker crumbs. Cook, uncovered at 325 degrees for 40 minutes or until firm.
