BROCCOLI SOUFFLE 
2 (10 oz.) pkgs. frozen chopped broccoli
1 c. Bisquick baking mix
1 c. cheddar cheese, shredded
2 eggs
1/2 tsp. salt
1 c. milk

Heat oven to 325 degrees. Butter 5 1/2-cup souffle dish or 1 1/2- quart casserole. Cook broccoli as directed; drain. Beat baking mix, milk, eggs and salt with hand mixer until smooth. Stir in broccoli and cheese.

Pour into dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately. Serves 6.
