BROCCOLI SOUFFLE 
3 tbsp. butter
1 c. milk
3 tbsp. flour
1/2 c. Cheddar cheese, shredded
1/2 c. onion, diced
1 pkg. chopped broccoli
3 eggs, separated
1 1/2 tsp. salt
1/8 tsp. pepper

Melt butter and add flour, then milk, cool 3 minutes or until thick sauce. Add cheese, then onions, and broccoli. Add beaten egg yolks, then fold in the souffle beaten egg whites. Bake at 350 degrees for 1 hour submerged in shallow pan of water.
