EASY OATMEAL COOKIES 
1 c. sugar
1 c. butter
1 c. flour
2 c. Quick Oats
1 tsp. baking soda (sifted with flour)

Preheat oven to 350°F.

Mix with hands -- form small balls and flatten on ungreased pan.

Bake for 8-12 minutes (depends on size of cookies made).

Variations: add 1 tsp. vanilla, applesauce, mashed bananas, cinnamon, raisins, cranberries, chopped nuts, etc. Agave syrup or honey can be substituted for sugar, if desired.

This recipe is great with the two extra eggs, extra 1/2 cup of flour, tbsp of honey, tsp of instant coffee, and tsp of cinnamon! I also substituted the soda for baking powder. Soooo yummy!

I am going to have to make it again, but remember to put the baking soda in it :) They taste amazing, but there is a reason all those ingredients are in there. I took the advice of putting 2 eggs in it as well. Just wanted to type to share what NOT to do lol

I just tried this recipe and I did add the eggs, cinnamon, vanilla as well, but as I started it I realized I had nothing like raisins or nuts to add to it all I could find was coconut and french vanilla marshmallows.. All I can say is yummmm! Turned our nice and fluffy.

I made this but put a bit of a twist on it! I used peppermint marshmellows, pinch of salt, peanut butter, and coconut! It was great, but I didnt add an egg and they weren't dry. I also added vanilla and cinnamon. Good luck

I didn't read the comments before making so I did not add the eggs so mine were dry. I added pureed apple instead of butter and half the sugar, they had a good taste. I will try with egg whites next time.

The recipe is awesome. My 2 yr old son loves cookies and this one is healthy too. I replaced flour with Wheat flour and added eggs also with chocolate chips on top. It took 15 minutes each in 6 batches making around 80 cookies of small size.

I am diabetic so I use Spenda for baking in any recipes requiring sugar. I've noticed that the "fake" sugar, for some reason, tends to make cookies much drier. I've tried using more milk, eggs, peanut butter but they always turn out dry. The product works excellent when used to make apple pies. Go figure!

Very simple due to few ingredients which I was looking for. Added 2 eggs as advised by many and butterscotch chips because that's how I like oatmeal cookies. Overall taste was good (not great) but the cookies were crunchy on the edges and crumbly through the middle.

Super, super yummy!!! My 5 year old daughter and I had fun making these! We added the two eggs and 1/2 cup flour, but then we also added in whatever sounded good from the suggestions... 1 mashed banana, 2 tbsp. cocoa, 1/2 cup peanut butter, a little shredded coconut. We cracked up talking about silly things we could add like onions, tomatoes, hash browns. It was a fun activity for a 5 year old! And the cookies were great!!! :)

I altered the recipe, kind of used it as a base and changed it up a bit. I cut the recipe in half, added an egg b/c it seem like the trend, cut back on the sugar and added some honey, vanilla and a pinch of cinnamon. I also used whole wheat flour instead, it tasted great and it was fluffy and moist. Try them with ice cream, YUM!!
