CARROT CAKE WITH CREAM CHEESE
ICING
 
2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 1/2 c. oil
4 eggs
3 c. finely grated carrots
1 c. nuts

Sift dry ingredients. Beat eggs and oil. Mix both together, add carrots and nuts, mix well. Bake at 375 degrees 1 hour 20 minutes in deep tube pan until springy.

ICING:

1 box confectioners' sugar
1 stick butter
1 pkg. (8 oz.) cream cheese

Mix well. Spread on cake.
