CARROT CAKE WITH CREAM CHEESE
ICING
 
3 c. grated carrots
2 c. sugar
1 c. Wesson oil
4 eggs
3 c. self rising flour
2 tsp. cinnamon
2 tsp. vanilla
1 c. chopped black walnuts

Mix sugar, oil, and eggs together. Sift in cinnamon, with the flour. Add the vanilla and beat well. Fold in the walnuts and carrots. Bake in a greased and floured tube pan at 350 degrees for 1 hour and 20 minutes.

ICING:

1/2 c. butter
1 (8 oz.) pkg. cream cheese
1 lb. box confectioners' sugar
1 tsp. vanilla
1 c. chopped walnuts

Combine butter and cream cheese and beat until light. Gradually add while beating, the confectioners' sugar. Add the vanilla and walnuts, mix well.
