CARROT CAKE - CREAM CHEESE
FROSTING
 
2 c. flour
2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
3 c. carrots, finely shredded
1 c. vegetable oil
4 eggs

Grease and flour a 13 x 9 x 2 inch baking pan. In mixing bowl, combine first six ingredients. Add next 3 ingredients, beating with mixer until all ingredients are combined. Beat for 2 minutes at medium speed. Bake at 325 degrees for about 50 to 60 minutes. Cool in pan about 10 minutes then turn out on a cooling rack. Frost with cream cheese frosting.

1 (3 oz.) pkg. cream cheese
1/4 c. butter
1 tsp. vanilla
2 c. 10X powdered sugar, sifted

In mixing bowl, beat cream cheese, butter and vanilla. Gradually add powdered sugar until smooth. Spread on cool cake. Sprinkle with chopped nuts if desired.
