CARROT CAKE WITH CREAM CHEESE
FROSTING
 
2 1/4 c. flour
2 1/2 tsp. cinnamon
1 1/2 tsp. baking soda
1 tsp. salt
4 eggs
2 c. sugar
1 1/2 c. grated carrot (about 3 lg.)
1 1/2 c. oil
6 oz. black walnuts

Mix flour, cinnamon, soda and salt; set aside. In large bowl beat eggs with sugar until fluffy and lemon colored. Add carrots and oil and mix well. Add flour mixture and stir to mix well. Stir in nuts. Pour into greased 13'x9"x2" pan and bake in preheated 350 degree oven 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on rack, then spread with frosting.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese
1/4 c. butter
2 1/4 c. confectioners' sugar
1/2 tsp. lemon peel

Beat together softened cream cheese and butter. Add sugar and lemon peel; beat until it is a spreading consistency.
