CARROT CAKE WITH CREAM CHEESE
FROSTING
 
2 1/4 c. flour
2 1/2 tsp. cinnamon
1 1/2 tsp. baking soda
1 tsp. salt
4 eggs
2 c. sugar
1 1/2 c. grated carrots, about 3 lg.
1 1/2 c. oil

Mix flour, cinnamon, soda, and salt. Set aside. In large mixing bowl, beat eggs and sugar until fluffy and yellow colored. Add carrots, and oil. Mix well. Add flour mixture and mix well. Pour into greased 9 x 13 inch pan. Bake at 350 degrees for 45 minutes. Cool before frosting.

FROSTING:

1 (3 oz.) pkg. cream cheese, softened
1/4 c. soft butter
2 1/4 c. 10x sugar
1 tsp. grated lemon peel

Blend cream cheese and butter; add sugar and lemon peel. Beat well.
