COTTAGE CHEESE CARROT LOAF 
1 c. cottage cheese
1 c. chopped cooked carrots
1 c. ground nuts
1 c. bread crumbs
1 tbsp. fat
2 eggs (substitute)
1 tbsp. chopped parsley
1/2 tsp. salt

Put cheese through sieve. Beat eggs lightly and combine ingredients. Pack the mixture well in a greased baking loaf pan. Bake at 350 degrees until well set. Garnish with parsley. Serve with tomato sauce.
