QUICK PINEAPPLE CHEESECAKE 
1 env. Knox unflavored gelatin
1 tsp. vanilla
1 (20 oz.) can crushed pineapple in own juice, drained (reserve juice)
1 (15 oz.) pkg. Ricotta cheese
1/4 c. Sugar Twin (or any other sugar substitute)
6 graham crackers (2 x 2 1/2 inch squares)

In a large bowl, soften gelatin in 1/4 cup pineapple juice. Boil remaining 1/4 cup juice and pour over gelatin mixture. Stir to dissolve. Add sweetener and vanilla. With electric mixer beat in Ricotta cheese until smooth. Stir in pineapple. Line a 9 inch pie plate or 1 1/2 quart dish with 5 crushed graham crackers. Pour in cheese mixture. Sprinkle with 1 crushed graham cracker. Chill until firm, about 2 to 3 hours. Calories per serving 270.
