CHEESE BAKED CARROTS 
1 1/2 lbs. carrots, diced & partially cooked
1 1/2 c. Cheddar cheese, diced
1 1/2 cans cream of chicken soup, undiluted
1 1/2 rolls Ritz crackers, crushed
1/2 c. butter, melted

Mix first three ingredients together and top with cracker crumbs and melted butter. Bake 30 minutes at 350 degrees.
